Snickerdoodle Blondie Bars

I don’t mean to sound like one of those people who get fixated on working out and dieting just before summer just to look good in a bikini butttttt I just got my new swimsuit for this year in the mail.

There it was:  a white plastic envelope emblazoned with pink lettering that I knew contained my recently ordered 20% off/free shipping swimsuit that I didn’t realllllyyy need but had to have.

And after weeks of telling myself I’d start eating better there I was– up to my elbows in cinnamon-sugar and blondie batter.

So I’m pretty sure that was supposed to be a sign… you know, like “Samantha stop stuffing your face with sweets 24/7 because summer is HERE NOW!”

I thought about that for a second.  And then like a completely rational person I set down the mixing spoon and went to the gym for the next two hours.

Except… NOT!  Instead what might have happened is that I licked the spoon, licked residual cinnamon/sugar from my fingers (I was done baking, so that’s totally hygienic, right?), and squeezed in a little bit of cardio by dragging myself away from these amazing Snickerdoodle bars and then running right back to do bite-sized Snickerdoodle curls right up to my mouth.  And then repeat.

Close enough, right?

I can’t really be held responsible… these Blondies are the perfectly soft bar-equivalent of Snickerdoodles.  I’ve tried Snickerdoodle Blondie recipes before that omitted cream of tartar, but in my opinion cream of tartar adds a distinct, tangy flavor that makes a Snickerdoodle a Snickerdoodle, and so I made sure to incorporate that in this recipe.

Definitely a good call, if I do say so myself, because the flavor is absolutely necessary.

Now, if you’ll excuse me there’s still at least a quarter of a pan of warm Snickerdoodle Blondies waiting for me on the counter and I have some working out to do 😉
